Raw Cucumber Rolls with Almond Herb Pâté

Ingredients
For Almond Herb Pâté:
1 cup of raw almonds (soaked for 2 to 3 hours)
1/2 cup sunflower seeds (soaked for 2 to 3 hours)
3 tbsp nutritional yeast
1 clove garlic
2 tbsp lemon juice
Sea salt, ground black pepper, and fresh parsley, to taste
For Cucumber Rolls:
1 large Greek cucumber
1 small bell pepper, seeded and chopped
1 small tomato, chopped
Directions
Blend all ingredients for Almond Herb Pâté until smooth and creamy; cover and refrigerate until ready to serve.
Trim the ends and slice the cucumber into long strips using a vegetable peeler. You will get about 10 – 12 slices.
Arrange cucumber rolls with almond herb pâté, bell peppers, and tomatoes.
Devour!
Chef's notes
The only downside is that you can't make the recipe several hours ahead of time because cucumbers release juices and become soggy. But, you can make Almond Herb Pâté a day or two earlier or use leftovers.
Make sure to use an extra-large cucumber, since the middle part of the cucumber is made of seeds, and it is practically impossible to slice. Use leftovers for salads; cucumbers are low in calories, but high in fibre and many essential vitamins and minerals (like Vitamin C, Vitamin K, Magnesium, Potassium, and Manganese).
