Cornbread Herb Muffins


Cornbread is one of the most popular old-fashioned breads on family dinner tables around the globe!

While most often this family favorite is made plain, there's plenty of room to customize it to your own taste. In this recipe, I added dried oregano and spoon the batter into muffin cups to make these irresistible cornbread bites. Ready in about 35 minutes / Serves 6


Ingredients

1 cup yellow cornmeal

1 cup all-purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoons granulated sugar

1 teaspoon sea salt

1 teaspoon dried oregano

1/2 cup sunflower oil

1 1/2 cup sparkling water


Directions

Begin by preheating your oven to 400 degrees F.

In a mixing bowl, thoroughly combine the cornmeal, all-purpose flour, baking powder, sugar, and salt. Add oregano and stir again.

Then, pour the oil and sparkling water into the mixing bowl.

Spoon the batter into a lightly greased 12-cup muffin tin.

Bake your muffins in the preheated oven for about 30 minutes, until a tester comes out dry and clean when inserted.
