Vegan Burek Recipe
Ingredients for 4 people or 4 pastries:
Ingredients:
500g Puff pastry
1 large onion
100g of soy flakes
100g of buckwheat, cooked
50ml of sunflower oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp ground cumin
1/2 tsp ground coriander
Instructions:
Sauté the onion with a little water. When it is half soft, add soy flakes, and pour 2 cups of water.
Cook until the soy absorbs all the liquid. Then, add spices and boiled buckwheat. Mix everything well; the filling is ready.
Divide the puff pastry, oil mixture, and filling into 4 parts.
We take several sheets of puff pastry (I had 3-4), cover each one with 2-3 tablespoons of oil and water mixture. Spread 1/4 of the filling and roll it up. Repeat the procedure for all 4 pastries.
Lower them onto the parchment-lined baking sheet; spoon the rest of the oil and water over them.
Bake at 200 degrees C for about 30 minutes.
