Winter Cauliflower Soup
Ingredients
1 tablespoon olive oil
1 large onion, chopped
1 (1/2-inch) knob fresh ginger, peeled and minced
4 cloves garlic, minced (15g)
2 large potatoes, peeled and diced
2 medium carrots, sliced
1 teaspoon curry powder
4 cups water
1 pound cauliflower florets with leaves
Sea salt and ground black pepper, to taste
2 tablespoons cilantro leaves, chopped
Directions
Heat the olive oil in a stockpot over medium heat.
Once hot, saute the onion for about 4 minutes or until tender and translucent.
Next, saute the garlic for about 30 seconds or until aromatic. Add in the potatoes and carrots, and continue to cook for 10 minutes more, adding a splash of water and stirring occasionally.
Add in the other ingredients and bring to a high boil. Next, cover and reduce the heat to medium; let it simmer for about 15 minutes or until the vegetable are tender.
Garnish with croutons, if desired. Serve warm and enjoy!
