Watermelon Ice Pops - Only 33 calories!

I had a large bowl of watermelon a few days ago and didn't think I'd be eating it. I placed a part of the batch in the freezer to make an easy watermelon sorbet later.

To prevent another part of batch from going bad, I put it into my blender, added coconut milk and sweetener, and Ta-da! I made the most refreshing ice pops ever!

We all like ice cream but we do not like extra calories and sugar that come with it. Nice cream is the discovery of my life. It is healthy and sugar-free, it is low in calories and full of the bursting natural flavors! And there are so many flavors to choose from.

I constantly make nice cream, trying to add new flavors every time. I made various types, from a classic creamy banana nice cream to velvety mango and peanut butter one. So I thought I can experiment with watermelon and make an impressive looking, delicious ice pops. Here is the recipe! Enjoy!

WATERMELON ICE POPS

Ingredients

(yields 6 ice pops)

200 g watermelon, fresh or frozen

100 ml coconut milk (vanilla oat milk and rice milk work well too; just make sure to use your homemade milk to make really nutritious and heathy ice pops)

1-inch ginger root, peeled

1 tablespoon fresh lime juice

Directions

Simply process all of the above ingredients in your blender until smooth and uniform.

Pour into ice pop molds and freeze for 4 to 6 hours.

Since then, I didn't stop experimenting with frozen watermelon. I have made so many types of these icy treats. I made desserts with a creamier texture and others that look like sorbets, I made smoothie bowls and a frozen watermelon pie (the recipe will be posted).

The best part of these desserts is that as long as you have some frozen and fresh fruit in your fridge, you can whip up a healthy dessert in no time.

For these fruity icy balls, simply blend frozen watermelon, banana and a few dates (or sweetener of choice). You can experiment with flavors and add fresh ginger, lemon juice, strawberries or raspberries. However, the results are fascinating!
