Blackberry Ice Cream
Blackberries are loaded with vitamins and minerals and provide several impressive health benefits. They are an excellent source of antioxidants so that they help protect our body against free radical damage. Then, they may improve blood sugar and insulin response, reduce appetite and improve digestion. However, I didn't particularly like them. Until last year. Around this time last year, I found wild blackberries at the local farmers' market. I made this ice cream and Voila! I felt in love with blackberries! A few days ago, I found the perfect vegan ice cream cones at the local supermarket so I can take this nature's masterpiece to the next level. This ice cream became a huge hit with all my friends ever since. I can't wait to share this recipe with you!
BLACKBERRY ICE CREAM
(Ready in about 10 minutes | Servings 2)
Ingredients
6 ounces blackberries
2 bananas, frozen
1/3 cup coconut milk
5 fresh dates, pitted
Directions
Mix all ingredients in your blender or food processor until everything is creamy and uniform.
Place in your freezer for 2 to 3 hours. You can use ice cream molds if desired.
